Leftover recipes ideas: Easy Bean Burgers

It really could not be easier to make a batch of bean burgers to go into your freezer.

Serves: 8 – Prep time: 15 minutes- Cooking time: 10 minutes

Ingredients:

  • 2 x 400g/14oz tins of kidney beans in water
  • 100g/3 ½ oz breadcrumbs
  • 1 egg
  • 1 tsp chilli powder
  • 1 jar of tomato salsa

Method:

  1. Drain and rinse the chilli beans, transfer to a large mixing bowl and mash coarsely with a fork or potato masher.
  2. Beat the egg and add it to the beans with the breadcrumbs, chilli powder and 2 tbsp of salsa. (Reserve the remaining salsa to serve with the burgers.) Use your hands to mix the ingredients thoroughly. Form into eight burgers.
  3. Preheat the grill to high. Put the burgers onto a baking tray and grill them for 4-5 minutes of each side until browned and heated through.
